Catimor is a hybrid variety created from crossing Caturra and Timor coffees, combining the sophistication of Bourbon with a touch of traditional Robusta. Successfully developed in Portugal in 1959, Catimor gained popularity in the 1980s thanks to its high yield and strong resistance to leaf and bean diseases.
Due to its partial Robusta heritage, Catimor produces a more pronounced bitterness compared to other Arabica varieties, while still retaining some of Bourbon's characteristic aroma and subtle acidity.
